MOPS Casserole Recipes...Mmmm Good!
 
 

Southwestern Quiche

 

5 eggs

½ tsp baking powder

¼ cup flour

½ tsp salt

2 Tbsp olive oil

1 c creamed small curd cottage cheese

2 c Monterey jack cheese

1 oz can diced green chilies

1- 9in unbaked pie shell

Garnish: Sour cream/salsa

 

Beat eggs with wire whisk, add baking powder, flour, salt & olive oil- beat well
Blend in the cottage cheese and Monterey jack cheese. Add the chilies, mix well and pour into the unbaked shell
Bake at 350 degrees for 45-55 minutes until brown and knife inserted comes out clean.
Serve with salsa and sour cream

 

 

French Toast Casserole

 

1 loaf (10 oz) French bread cut into cubes

3 cups of milk

8 eggs

4 tsp sugar

 

Topping:

2 Tbsp butter or margarine cubed

3 Tbsp sugar

2 tsp ground cinnamon

Maple syrup

 

Place bread cubes into greased 9x13 dish

In bowl, beat eggs, milk, sugar and vanilla

Pour over bread

Cover and refrigerate 8 hours (overnight)

Remove from refrigerator 30 minutes before baking

Dot with butter

Combine sugar and cinnamon and sprinkle over the top

Cover and bake at 350 degrees for 40-45 minutes

Serve with syrup 

 

Maple Breakfast Pizza

 

1 package maple flavored Jimmy Dean sausage

1 package crescent rolls

1 egg beaten

4 oz cream cheese (softened)

1 ½ cups granny smith apples

2 Tbsp sugar

1 tsp cinnamon

4 oz cheddar cheese

 

Cook sausage
Unroll crescent rolls and arrange points to the middle of a 12” pizza pan- press together to form pizza crust
Combine egg and cream cheese- whisk until smooth
Toss apples with sugar and cinnamon
Sprinkle sausage over crescent rolls
Spread cream cheese mixture then apple mixture over the sausage
Sprinkle with cheddar cheese
Bake at 350 degrees for 15 minutes

 

 Ham and Spinach Quiche

 

Unbaked single pie crust

1 & 1/3 cups of milk

½ finely chopped onion

1 tsp salt

¼ tsp nutmeg

Dash of pepper

3 eggs, slightly beaten

4 oz. cheddar cheese

½ cup chopped ham

6 oz chopped spinach, drained well

 

Heat over to 400 degrees and bake pie crust for 6-8 minutes
In saucepan, combine milk, onion, salt, nutmeg and pepper- heat to a boil; reduce heat and simmer for 1 minute
Slowly stir hot mixture into beaten eggs in bowl
Sprinkle 2/3 of cheese into the pie shell
Arrange ham and spinach in shell
Pour egg mixture over ham and spinach and sprinkle with remaining cheese
Bake at 400 degrees for 25 minutes

 

Cheesy Potato Casserole

 

1 bag of Ore-Ida Country style hashbrowns

1 can cream of chicken soup

1 cups sour cream

1 ½ tsp salt

¼ tsp pepper

3 green onions chopped or 2 Tbsp onion flakes

2 cups grated cheddar cheese

 

Topping:

¼ cup butter, melted

2 cups crushed corn flakes

 

Mix sourcream, soup, salt, pepper onions and cheese in large mixing bowl
Add hash browned potatoes (uncooked)- stir to combine
Place into greased 9x13 dish
Top with butter and corn flakes mixed together
Bake at 350 degrees for 45 minutes (or until bubbly around edges)

 

 

No Time to Cook Quiche

 

Preheat oven to 400 degrees

Bake single pie crust until golden

 

Beat 4 eggs and ¾ cups of milk

Pour into pie crust

Sprinkle with 2/3 cup shredded cheese (any flavor you like)

Dash of salt and pepper

Bake at 400 degrees for 20-30 minutes until golden

Variation: add cooked bacon, ham or sausage or even onion or spinach
